Chicken breast stuffed with blue cheese

This is a little more complex but it really tasty.

You will need:


  1. Place your chicken breast on the chopping board, using a sharp knife cut all though the middle of the chicken horizontally. Don't cut all the way through, you want one edge of the chicken to hold the breast together. The chicken breast should now open like a book.
  2. Crumble up some blue cheese and press this into the middle of the chick breast. Then close the chicken breasts back up.
  3. On a plate, mix the flour, salt and pepper.
  4. Rub a little olive oil onto each chicken breast and then roll the chicken in the flour until is is thinly coated.
  5. Heat some oil in a frying pan and cook the chicken breasts in this until they are cooked all the way through and the cheese is hot. The flour should give the chicken a nice crispy coating.
  6. Serve with mash potato and green veggies or salad.
